Yes. Set the next invoice number in Settings > Document Numbering and Checkmate continues from there.

Yes. Templates use DejaVu Sans by default, which covers Cyrillic, Greek and most European accented characters. Helvetica, Times and Courier are also available.

No. PDF generation is wrapped so that a rendering error can never block an order email or the checkout process, and generated PDFs can be cached on disk.
