Checkout Blocks use one shared address schema, so independent billing/shipping visibility and requirement settings, arbitrary custom positions, and unsupported field types still require classic checkout. Do not hide the country selector. Test field changes with your payment and shipping methods before using them on a live store.

Values are saved as order line metadata that authorized REST clients can read. The official app does not currently create native editable controls for arbitrary third-party checkout fields.
