Yes. Any Odoo instance the OdooConnector service can reach over the internet works: Odoo Online (odoo.com), Odoo.sh, and self-hosted Odoo Community or Enterprise.

Odoo 16 through 20 are supported. For Odoo 16–18 the service communicates with your Odoo instance over XML-RPC; for Odoo 19 and later it uses Odoo's modern JSON-2 API. Your Odoo version is detected automatically when you connect — there is nothing to select or configure, and the detected version is shown in the API Connection bar.
