You can use the [pl-projects] short code in any page or post to show the status of all your current projects. You can show the status of an individual project by using [pl-projects id=x] where x is the id of the project. I don't understand the user permissions. Users with the super administrator or administrator role will be able to view tasks asigned to all users. Users with the role of editor, will only be able to view tasks assigned to them or to anyone.
