Standard WordPress text blocks (Paragraphs, Headings, Lists, Quotes, Buttons, etc.) are supported out of the box. For blocks provided by other plugins, you can register their text attribute names under Settings > Prozen AI Proofreader > Third-party Gutenberg blocks.
