No. An order sends its reference, its total, its currency, when it was paid and, if it used a discount code, that code and the discount it gave. If the tracking tag had already given the shopper's browser a random visitor key or request id, it sends those too. No name, email address, telephone number or address leaves your site.

Yes. The tag is how Trace follows the journey that led to the order. Sending the order from your server is what keeps the value right when a browser blocks the tag, and Trace counts an order once however many ways it hears about it.

The tag stops and no more orders are sent. Deleting the plugin removes the settings it saved, the mark it leaves on each order, and any visitor key or request id an order is still holding. Nothing already recorded in Trace is affected.
